Charlotte the smoker + BBQ

With Charlotte, our smoker, we can hot smoke lamb shoulders, beef briskets, chicken wings, and much more. For larger joints, we smoke and cook them low and slow overnight, ensuring tender, flavorful results. We also serve the food directly from the smoker, keeping it warm while adding a unique touch of theatre to any party.

Chef Rob at Charlotte the smoker

Spit roasted whole pig or lamb + BBQ

We can source a whole free-range pig or lamb, ensuring there's plenty to go around.  For a perfect low and slow cook, we’ll start the spit roasting in the morning, carefully managing the coals throughout the process.  It typically takes 6-8 hours to achieve tender, flavourful results.  Once cooked, we will break the meat down and serve it in chafing dishes to keep it warm and ready to enjoy.
